Thank you all so much on your lovely comments about my weight loss journey. I started out doing Weight Watchers until I watched a video on the Catalyst Programme on the ABC about sugar and what it does to your body. My dad passed away from a hereditary disease which is made worse by the consumption of sugar and carbohydrates which convert to sugars in the blood. So I need to be careful and make sure that I am here for a long time instead of for a good time !!!
I lost a lot of weight once before on a low carb diet and kept it off for many years until I got back on the "sugar" wagon. So I am now into my 3rd week of no sugar and under 20g of carbohydrates per day and am pleased to report that I am doing well and losing weight each week which must mean I am doing something right !!
I have always made this dessert and thought that it might be fun to share it with you - You could of course use "Light" products if you do not want the "full fat" version. You could also add a base if you wish.
Low Carb Lemon Cheesecake
2 X 9g Sachets of Diet Lemon Jelly
2 X 250g Blocks of Philadelphia Cream Cheese at Room Temperature
600ml Whipped Cream
1/2 Cup Cold Water
1 Cup Boiling Water
Add the 1 Cup of Boiling Water to the 2 sachets of jelly mix and stir until dissolved. Set aside to cool slightly.
Chop up the Cream Cheese and add the cold water in a large mixing bowl
Beat slowly until it is all combined
I throw a tea towel over the mixer when beating the cheese as it stops the splattering as the cheese beats.
Once they are combined. Add the cooled lemon jelly mix and beat again until nice and smooth - Scrape down the sides as you go.
Next add the 600ml of whipped cream and gently mix until well combined
Place into a bowl to refrigerate to set and then serve on it's own or accompanied by strawberries. It tastes divine !!
I even put some in some little tubs to take to work.

Oh sweetie! I hope that's less that 20g of *starchy* carbohydrates, rather than *all* carbohydrates - vegetables are carbohydrates too!! ... Fantastic to hear that your weight loss journey has been making strides though! Woohoo!!! I am, along with my mum after she read my book (I like to read up on the science of things before I go full steam ahead), going to try the 'fast diet' - 2 days of 500calories, 5 days of whatever (though I am going to aim for between 1200 and 1500 I think on those days :) ) in conjunction with my exercise which I will be starting up again later this week (injury and then illness stopped me from continuing my HIT workouts for a couple of weeks). Just you wait till March comes honey - we'll be a coupl'a knockouts!!! *giggle* ... Thanks for the recipe - always looking out for less hip-expanding yumminess!! Have a sweet week hun!! xxx
