I don't know about you but I love to bake but I have to be in the mood for it and usually bake when a recipe inspires me or the lunch box filler tins are empty. This weekend I flicked through my Donna Hay Magazine and came across a recipe for Raspberry Upside Down Cakes.
I love anything that is "Raspberry" so knew that this recipe would be lovely. It is a White Wings "Donna Hay" Recipe and can be found HERE.

Now this picture is quite misleading because there is only 2 of these little cakes left - They were a real hit !
Whilst I was in the mood and with an abundance of fresh lemons given to me by friends I decided to make a Lemon Curd Cake.
This is a wonderful little cake and very easy to make. I will share the recipe in my next newsletter. We have just planted our own lemon tree so I am looking forward to having a nice supply of lemons of our own in the coming years.
It is another beautiful day in paradise here today but as much as I want to get out in the garden this little bundle of loveliness is calling my name. I must of course OBEY.

Fee can you be my mum love all your baking I am with you love any think rasberry. My mother in law use to grow rasberry but she sold her house and now in a a nursing home boy I miss her rasberrys.

It must be the day for baking!! We are having a wet,windy day with a few storms coming and going, so it's just the kind of day for making some shortbread, and possible some muffins, I think. I have been very lucky and recently got a KitchenAid mixer. It makes my baking so much easier and much more pleasurable these days.
Your baking looks very yummy Fee. Will definitely have to be trying some of your recipes :-)

I've just gained so much weight soaking in all those calories. those pictures were so good I could almost taste the goodies. Now those fabrics look good enough to bey obeyed, but I can't wait to see what they want you to do with them.

When life gives you lemon.....Lemon curd cakes looks delicious :) I also had an abundance of lemons today - so made lemon curd - two precious jars to pop in the fridge (one already invaded by two legged munchers! Look forward to your cake recipe.

Oooooh Fee, what are you doing to me??!! I felt my rear end grow a bit just LOOKING at those yummy raspberry cakes. I just love ANYTHING raspberry too, they're my faves ;o). Your lemon cake looks pretty good too - oh if only you lived closer ;o).
